Tofu & Pudding?

Last night it was just Kai and I again, as the Hubs headed back to Chicago to get his car.  Turns out the thermostat case was broken so it was losing coolant and that's why it over heated - or at least that's MY translation of what was wrong.


So it was just the two of us which means I had free reign for our meal. :)


With a little help we decided on Tofu...


TOFU STIR-FRY (for lack of a better name)


First I wrapped the tofu in a dish cloth and set a heavy book on top to help drain the fluids out.  Then After about 30 minutes I chopped it up.  At this point I had to guard it.  It turns out that Kai really likes raw tofu!



Then we mixed our marinade:
1/4 C Rice vinegar
1/4 C Tamari (soy sauce)
2 T of Honey
1 T of Carob Powder (or use cocoa)*
dash of Garlic Powder, Onion Powder & Chili Powder*

Whisk it all together - give it a taste and decide if you want to add anything else.

* We actually added the carob & chili after tasting it the first time and deciding it needed "something". :)


Let your little ones help - they're much more likely to eat what they help prepare.

Marinate your tofu in the sauce for about 20 minutes.

Little hands are helping

Pre heat your oven to 375° & spread your tofu on a pan.
SAVE THE MARINADE FOR LATER

Spritz with some EVOO & put into the oven for 30 minutes - flipping after 15 minutes.


When it's about done heat a skillet over med heat.

Toss in some broccoli, carrots & spinach and stir fry until warmed & wilted.


Pull the tofu out of the oven...


and add to the pan along with the marinade you had saved.

Heat it all together for about a minute or so.



Add it on top of rice and you have a delicious meal that even the kids will like...
Especially if they got to add the chocolate (aka carob powder)!


And we had plenty left over for tomorrow's lunch!  This could easily feed a family of 4 and we were closer to 1.5. :)

Of course that wasn't the hi-light of the meal.

Ever hear of saving the best for last?
(I certainly hope so, it's a common saying)

Well here was our "last"...

CHOCOLATE PUDDING


1/2 a small avocado
1/2 a frozen banana
splash of vanilla
2 pitted dates (soaked for a few minutes to soften them up)
2 T cocoa
and then since I couldn't help myself...
Handful of Spinach
1 T chia seeds
Small drizzle of Agave Nectar** 

**Taste before adding to decide for yourself if it needs sweetened.  If it had just been me eating it then I wouldn't have added any.  I like a dark chocolate flavor but I know Kai needed more sweetness.

Put in your blender and blend baby, blend!

Makes 2 bowlfuls...


It's entirely possible that we each licked our bowls clean.

  2. I never in a million years would have put those items together and thought that anything resembling chocolate pudding would come out!!
