I saw a photo of stuffed mushrooms on line yesterday and thought that sounded perfect for dinner but I only had pre-sliced mushrooms and I wasn't going to the store. :)
So instead I made Un-Stuffed Mushrooms. It basically became a stuffing like dish that will probably be showing up on our table next Thanksgiving. I loved it, Kai loved it, the Hubs...Wouldn't try it. But he doesn't count. He won't try anything. :)
UN-STUFFED MUSHROOMS
1 chopped Onion
1/4 C chopped Celery
1/4 C chopped Green Onion
1 C Mushrooms
3 Kale leaves - de stemmed & chopped
7oz Tofu (1/2 Block)
1/4 t Minced Garlic
Dried Thyme
2 slices of Whole Grain Bread - crumbed
2 T Nutritional Yeast
Pre-heat oven to 350°.
Add your Onion, Celery and Green Onion to at hot skillet and Saute until onion is transparent.
Add your Mushrooms and Kale and saute until Kale is wilted.
In a bowl crumble the tofu and add to the saute pan.
Add the Garlic and Spice and saute a bit longer.
In a bowl crumble your bread.
Pour the saute into the bread bowl and stir.
Add Nutritional Yeast and stir.
Put into an oven safe dish and bake 15-25 minutes.

And Kale |
Crumble 1/2 block of tofu |
Add tofu to the saute pan |
Crumble Bread |
Add Saute & Nutritional Yeast to the bread & stir |
Put into an oven safe dish & bake |

I had mine with a side of 90 second Rice and sliced Tomatoes with Feta. Kai had the same but with Greek Yogurt as a side also (she didn't eat her rice) |
The Hubs also had rice and a piece of chicken "oven fried" |
