Weekend in Pics...

 Kai (and the Hubs) enjoyed Bison Burgers...

I had a Veggie burger.  Each meal included the burger, chips, granola bar, cookies & coleslaw for only $2.50!!


 I found that adding the coleslaw to the burger was a brilliant move...

Dinner at the Colt's Grille...  It was dark.  I had the Margarita Pizza.  If you like garlic you'll LOVE this Flat Bread... I do not. :(

Excited to attend the first playoff game!


 Sad that they lost but very hopeful for tonight... If only it wasn't a school night for Kai.  I SO want to go to another game. :)

Making Paul Happy

This morning I went to pick up Kai from school and, per usual, I set the house alarm when I left.  While picking up Kai I got a call from an unknown number so I let it go while I got her into her seat.  Then I listened to my voicemail and it turns out that something had set the alarm off.  It was the door to the garage so I was 99% sure that the door had re-opened and that there wasn't anything shady going on.  When I got home I found out I was right and that the door had just popped back open.  I called and canceled the alarm.  It was all good.

Later I had this convo with the Hubs after he checked HIS voicemail with the same alarm company message...



Oh, it may be helpful for you to know I've named the poltergeist Paul.  Poltergeist takes too long to type and the odds of constantly spelling it correctly are low.  Paul's much easier and I think will make him easier to get along with.  Maybe now that he has a name, he'll stop leaving cabinet doors open after I've left a room, or will stop opening my dresser drawers just an inch.  It will probably be best to keep him happy with lots of Frozen Yogurt.  :)

Also, I keep finding soda cans in odd places (i.e. on top of the coat rack & behind our curtain) so the soda can thing is something I've been combating for a while, which is why, I admit, I'm a little "snitty" about it.  lol! 

Ok, refocusing...

Yesterday I started the day off with an Almond Joy like breakfast.  On Wednesday night, we got on topic of Almond Joys... Apparently if you order a chocolate milk with coconut flavoring, the maker may get excited and recommend also using Almond Milk to create a super sweet Almond Joy Cocoa Drink.  Also, the Hubs has been buying Almond Joy creamer for his coffee.  Almond Joy is everywhere and it got into my head!

Oatmeal topped with cocoa, coconut milk, almond butter, flax & chia seeds, and shredded coconut.  To be honest I don't know that I've actually had an Almond Joy, but this bowl was delicious!



And very filling...probably because of all the HEALTHY fats. :)


For lunch Kai and I actually had the exact same thing and both of us ate ALL of our food!  Half a Large Sweet Potato topped with Greek Yogurt, flax seed, cinnamon and a SMALL drizzle of Maple Syrup + a Side of cucumber + Lime Basil Hummus with nutritional yeast.




For a snack we later had popcorn with raisins, sunflower seeds & nutritional yeast.  (and I took a picture of it...props to me!)




Dinner was a delicious plate of B&B from Yats!




The Hubs got the Chili Cheese EtouffĂ©e with crawfish and Kai shared our plates.




Afterwards it was FINALLY time to appease Paul and get us some Frozen Yogurt. :)




Yep, I think Paul is happy now. :D

Sports & Trivia

Good morning!  How was your evening? Last night the Hubs attended the last game of the regular season for the Pacers.  He and a friend had sweet seats for the last game, against the Bulls!  They didn't win but, honestly they weren't playing to win.  A win or a lost wouldn't help them one way or the other so the Pacers were just playing to stay healthy.  The Bulls were still fighting for the top seed so they played more of their starters...and yet the Pacers only lost by 5 points!  We've already bought tickets to a playoff game this weekend!  AND today's the NFL Draft, but the Colt's already announced they're drafting Luck so there shouldn't be any surprises there for us.  In fact at 8:00 tonight his official Colt's Jersey goes on sale!  

Between a new hope at quarterback and the Pacer's stellar year there are a lot of pep rallies scheduled around Indy...It's a full on sports weekend.  I'm hoping to be able to make it to at least one party. :)

Anyway, back to the food...

Breakfast yesterday was a Gingerbread Smoothie with lots of spinach.
When I make a smoothie for breakfast I always add oatmeal to it for a little more staying power.  And as a tip, I'll add the oats & milk first, get dressed, then mix the rest.  It softens the oatmeal so that it blends a little better. :)

Oatmeal + Almond Milk + Chia Seeds + Flax Seeds + Spinach + Frozen Banana + Ice Cubes + Cinnamon + Ginger + Black Strap Molassis


Yum!!



Lunch was a left-over-black-bean-burger salad. :)
A bed of spinach + a crumbled black bean burger + cucumber + Salsa + sweet pepper + cherry tomatoes + nutritional yeast



And since Kai now completely turns her nose up at salads she had a jelly sandwich, with some black bean burger (she only ate one bite of them), tomatoes, peppers and cucumber.

For a late afternoon snack I made us some popcorn with nutritional yeast, raisins and sunflower seeds.  We inhaled it thought before I could get a picture.  No regrets though, it was way too good to postpone eating just for a few snap shots. :)


Then we all ate dinner separately and I took no pics again (ok, so maybe a regret there)!


Kai had:  Cous-cous + Quinoa + Broccoli + nutritional yeast all mixed together.
The Hubs ate at the game...probably something he loved but that I would turn my nose up to. lol!
I had a personal cheese, tomato & mushroom pizza while doing some trivia with my High School Alumni at Kazablanka's.


And guess what?  Our team took first place.  There were some grumpy second placers at the bar who tried to throw down but in the end everyone left smiling. :)


2 of the questions that stumped us, as it turns out, the Hubs could have actually helped on.

Yeah, to me it's the red head from Mythbusters...but they wanted an actual name.  Who the hell knows that?  Well, it turns out the Hubs.  When I said they wanted the name of the red head from Mythbusters he replies with, "isn't it Kari?"  


Then they wanted to know who's album cover this was:
The name was blacked out on the question.
Since I download my music I never see covers so I'm no help in that department...even if I could ID Nickelback, but of course the Hubs knew it. :P

Fortunately his day-late, dollar-short answers didn't cost us because, like I said, We Won!!  So take that noisy 2nd place bar lady. lol!!

Getting Fancy & Crafty!

Yesterday's breakfast was so fancy...


Seriously, it totally trumped cereal. :)


I basically put a pot of water on the stove to bring it to simmer and once there were little bubbles going I poured in 2 eggs so they could poach for about 5 minutes.


While that was going on I made a bed of spinach and then added the left over grilled veggies from dinner and some mushrooms.  Once the eggs were done Kai and I each got one and then topped it with some nutritional yeast. 


In addition to that we split a kiwi and a banana.  Oh, and Kai had a slice of some Irish Soda Bread bought at the baked goods table at the St. Mary of the Woods Earthday Festival.




After school Kai and I ran a quick errand to Georgetown Market to refresh our Nutritional Yeast supply.  While there we each got a Rice Dream Ice Cream Treat. :)


Sometimes you have to eat dessert first!


Lunch was tuna salad (tuna, avocado, greek yogurt, dijon mustard, nutritional yeast) with a side of cherry tomatoes, cucumber, kiwi and gouda cheese.  I have to say, even lunch looked a little fancy...



For dinner we grilled burgers.  The Hubs had his beef burger that we divide into single servings and toss in the freezer when they're bought.  Then the night before I just grab a baggie and put it in the fridge to defrost. :)


I made Black Bean & Corn Burgers
1/2 C Oatmeal
3/4 C pre-cooked Black Beans
1/4 of a White Onion
2 T Flax Seed
1 T Lemon Juice
1 T Paprika
Blended in my Ninja then I stirred in 1/2 C Frozen Corn Kernels.


 Formed Patties...
 And Grilled on low...


 In addition we had grilled sliced red potatoes & sweet potatoes...


Plus I roasted some frozen okra at 450 for about 30-40  minutes. :)

I don't like regular hamburger buns.  They're too something.  So I took a page from the Akins Craze and used lettuce to wrap my burger with some tomatoes and gouda. :)

And to continue my craftiness I did finish spray painting the swing, I sewed bean bags for the Corn Hole game we made at Christmas (In no way are they "regulation"...I just made squares and am filling them with dried beans to a weight I think seems right) and then I made this...



A Kindle Holder!!  I started out planning to take pictures but then just started winging it and the pictures didn't continue. :(

And here's my attempt to describe what I did...

1.  I used an old inspirational quote book and cut out the pages part.  

2.  I glued a rectangle of felt to the inside cover to give it a little cushion against the face of the kindle when it's closed.

3.  I laid the book over on some pink material and cut the material so that it would wrap around the outside & inside of the book.  Then I sewed a hem onto the ends so that they would meet in the middle and overlap a bit.
4.  I sewed a strip of green material and attached it on one side to the right side of the pink material.  I also sewed on 2 elastic strips to the corners opposite the green pocket.
5.  I folded the material inside out and sewed the top & bottom, using the book cover as a size guide.


6.  I turned the material right side out and  using liquid stitch, I added a square of decorative material and then sewed on a button and a ribbon.


7.   I opened it up and slide the book cover inside.
8. I added a strip of adhesive Velcro to the inside seam to keep it closed.

All Done.

And yes, the Hubs has commented that I've become quite crafty since getting the sewing machines out!  But I'm finally getting a lot of little projects I've planned to do, done and it feels glorious. :D
