Spicy Fall Soup

I'm officially in soup mode.  In the spring/summer I eat salads, in the fall/winter I eat soups.  They're both quick to pull together and hard to mess up! :)

For lunch I wanted something a little spicy.  Into my pot went:

Sauteed onions
1 can diced tomatoes with chili
1 can drained & rinsed black beans
frozen corn
frozen okra
a couple handfuls of brown rice
veggie broth
a lot of chili powder :)

I added a lid and let it simmer for about 30-40 minutes.


Then I topped it with a bit of nutritional yeast and some avocado.


And there was enough to enjoy it for dinner too!  :)
