Humus

Did you notice that on my last salad I had a teeny tiny dollop of humus?

Trust me, it was small.  And there's only one reason I'd use a microscopic amount of humus...

I ran out!

So first thing in the morning I made up a new batch.    Now, let me be clear, we cannot go without humus.  I eat it with veggies, on salads, by the finger spoonful (I'm an adult and would never just swipe my finger through the humus or nutbutter for a quick pick-me-up)

I prefer making it over buying it for a couple reasons.  First, I don't have the $$ to spend on a new container 2+ times a week.  Second, I don't like a lot of garlic and nearly every pre-made humus is bursting with it.  Third, it's simple to make at home which means I know exactly what's in it - no mystery ingredients. :)

My favorite humus is with sundried tomatoes but I basically just use what I have on hand...




HUMUS


Basic Ingredients:
1 can chickpeas/garbanzo beans - drained & rinsed
1 spoonful of Tahini Sauce
Juice from 1/2+ lime
Approx 1/4-1/2 C EVOO (more or less to consistency)


Favorite Bonus Ingredients:
Handful of Spinach
Approx 6 Sundried tomatoes
Handful fresh Basil (from my garden!)


Put it all in a food processor and puree.
Keep pureeing until it's smooth.
It may take a couple of tries to perfect your ingredient qtys.  That's one of the best parts about making your own...Make it the way YOU like it.  If you like a garlic flavor then by all means, throw some minced garlic in there. :)
Put it into a container and into the fridge.  It's VERY hard not to eat it when your done pureeing but I promise it's better when it's cold. 


If you're serving it to company then put it in a nice bowl and top with a little EVOO and paprika.  Fortunately, I don't need to fancy things up for my family (those lucky dogs!).
