And before tailgating there was this delicious breakfast...

And for those of you who want to know how I made my QUINOA BURGERS...
1/2 C Quinoa
1 C Water
1 Onion (I like a LOT of onion, for most you'd probably only want 1/2)
1/2 T Ground Flax + 1 1/2 T water (equal to 1/2 an egg)
Big Handful of Chopped Spinach - nuked with some water to wilt it
1 1/2 T Whole Wheat Flour
Pinch of Salt
1/4 t Baking Soda
1/4 t Paprika
Bring the Quinoa & water to boil and let simmer for about 15 minutes until the water is all absorbed.
Pre-heat your oven to 400°
While that's cooking gather/prepare the rest of your ingredients.
When the Quinoa is cooled a bit mix everything together & with wet hands form patties.
Place on a non-stick mat or parchment paper on a cooking sheet.
Bake for approximately 20 minutes. Flip and cook for another 15.
I eat mine topped with tomato & avocado. :)
