Look at that breakfast!

Nom, nom, nom...

Kai and I woke up and turned on the TV and Strawberry Shortcake was on.  Well, after watching that for a while both Kai and I were determined to have strawberry shortcake for breakfast.  But since it was BREAKFAST we used pancakes. :D


1/2 Cup Rolled Oats
1/2 Cup Cottage Cheese
1 Egg
1 t baking soda
1 t baking powder
2 T ground flax seed
1 T chia seeds
Splash of Almond Milk


All that was blended in my ninja and then scooped out on to a hot griddle.



and then flipped...

Each of us had 3 pancakes stacked and sprinkled with cinnamon then topped with sliced strawberries, greek yogurt and 1 whole strawberry.


 It was very, very good. :)


For lunch Kai wanted a "turkey and cheese sandwich"?  I'm not sure where that came from but we had some deli chicken in the fridge so I made her a sandwich along with some sliced veggies including tomato, bell pepper, cucumber, mushrooms and avocado. 




 I on the other hand wanted a salad...a bed of spinach topped with bell pepper, tomato, mushroom, cucumber avocado and nutritional yeast. :)

When the Hubs got home we had some running around to to, which lead to this...


More Frozen Yogurt!!  And although it doesn't set the ideal example that was basically my dinner.  Followed that evening by a big bowl of popcorn, kale chips and nutritional yeast.  



So, yeah, it'd probably be better to focus on the breakfast than the "dinner". :)

Ehhh kind of days.

Not much has been going on around here.  Sunday we just hung around, and then yesterday I went into the office.  Nothing really worth noting but I guess I'm doing it anyway.

On Sunday we went out to lunch and Kai and I split a Veggie Fajita.  Well I say we split it - She didn't eat much.  But honestly, we go more for the chips and salsa than anything else anyway. :)

In the afternoon we headed over to my parents to swim but the pool was too cold for my tastes and their Hot Tub was WAY too hot.  Fortunately Grandpa doesn't mind the cold so he took Kai swimming while I visited with my mom and a friend who was staying with them.  As afternoon turned into evening my mom offered to make dinner so we stayed even longer.

We made black bean burgers and turkey burgers for the boys.  We also grilled asparagus and zucchini.  And Roasted in the oven some brussel sprouts and okra (we ran out of room on the grill!).  


 Plus there was tomatoes, bell peppers, onion, mushrooms, avocado and mango. :)

And Gale, my parent's guest, showed me an easy way to make artichoke!!



I've wanted to make it for so long but was always intimidated.  All she did was cut off the bottom, rinse it REALLY well, then, once it's clean, cover it in water again and DON'T shake the water off.  Wrap the whole thing in plastic wrap and then nuke it for about 5 minutes.  I want to figure out if there's a way to steam it without using plastic wrap but other than that I can't wait to try this myself. :)

As for Monday, breakfast was a drink of Chia Seeds, Cinnamon, Honey and Kefir.



Not a glamorous looking drink but I do like it. :)

Lunch was Red Mango!  I think I've created monsters in introducing the self-serve fro-yo to the girls in the office.  Unfortunately I had a noon meeting so one of our friends couldn't join us. :(


Nothing like a LOT of fro-yo to make you feel better about missing a friend though. lol!


Later in the afternoon I had a snack of a pear...


I LOVE my desk cup caddie...Keeps my laptop safe from spills. :D
 And then a little later I had a nutty snack...

Finally when I got home I had dinner. 


The Hubs grilled some corn and asparagus for me and it was ready as I walked in the door. :D


My meal consisted of a big bed of spinach (I was CRAVING veggies) topped with my left over fajita veggies from Sunday's lunch, nutritional yeast and the asparagus.  It may not have been very pretty but it did hit the spot!




During/After dinner the Hubs and I  finished up watching a Game of Thrones marathon.  We have free HBO this weekend which gives us the chance to watch season 2!  I have to say it's a good thing the Hubs has finished the book this season is based on.  I keep getting lost in all the new "kings".  :)

Mr. & Mrs...

Saturday was all about the LOVE! :)

Yep, we went to my cousin's wedding and had so much fun.  Kai's still talking about the "princess", aka bride.

I didn't get pics of breakfast or lunch.  And to be honest these pics are courtesy of my mom because we forgot my camera, my phone and the hub's phone! Breakfast was a cup of Kefir and a pear.  Not much but I wasn't terribly hungry and Kefir is REALLY filling.  Lunch was at Panera Bread where I had the pick two...Black Bean Soup and Mediterranean Veggie Sandwich plus an Apple.

Then it was finally time for the wedding...

After a BEAUTIFUL outdoor ceremony we headed inside for the reception.  Kai got to sit next to her cousins where we enjoyed fruit kabobs and basil, mozzarella & tomato horderves.  Then we ran around enjoying some early dancing and visiting with my other cousins and their families.

After a traditional starter salad, I had the Vegetarian meal option which was bow-tie pasta with veggies & a cream sauce.
This was a LOT of pasta, I ate probably half of it.
The girls got the "children's" option with the chicken tenders and tator tots.

And the Hubs got the Prime Rib with broccoli (I ate his broccoli and he wound up eating Kai's left overs, lol!)

Of course there was cake for dessert!

After the cake we got down to business...I mean the dancing!

And guess who caught the bouquet!!  Oh yeah, Kai carried that around ALL NIGHT, and has been carrying it around all morning.  She's so ready to be a bride!

Here she is with my cousin.  She was completely star struck and just followed Felicia around the entire night.  When Felicia went outside she'd stand by the door waiting for her to come back in!

When not following the bride, Kai danced.  All. Night. Long.  She was a dancing fool!  At 10 we called it a night, to her protests.  She even wound up in the center of a dance ring at one point.  I'm seriously fearing her teen years!

And apparently I dance with a little attitude! lol!

Fancy Dinner Time

Two posts in a row...I'm off to a good start. :)

Didn't last night's dinner look fancy?  I think it did.  And it started from such humble beginnings.


But we're going to start with breakfast.  Oatmeal.  Topped with frozen peaches and raisins. :)

After breakfast I caught up on some work and chores while Kai colored. :)


Then we were off to the park!  On Thursday I contacted some of my friends to see if we wanted to all go to the zoo.  About 5 minutes after I send that e-mail I remembered that Friday was Zoobilation so the zoo wasn't open for general admission. :(  Instead I suggested we meet up at the park...


And that we pack a picnic lunch.  Kai had left over mac & cheese with broccoli.  For her drink I filled one of her animal cups with 1/2 Apple Juice and 1/2 Water.  Yes, she's 4 and I still dilute it.



I had a spinach salad topped with frozen plums (they didn't thaw the way I thought they would while we were running around playing), pecans, sprouts, feta and avocado.  It was REALLY good. :)  To drink I filled a BIG Mug-N-Bun cup with water...it's the biggest cup I have with a lid.

After the park we headed home where I worked some more while we watched Veggie Tales Pirates Who Don't Do Anything.  We have Netflix and have been on a Veggie Tale kick lately.  Any one else watch that cartoon?  It's actually really cute. 


We also got the new Green Bean Delivery.  This week I got:
3 Ears of Corn
1 Bunch Broccoli
2 Onions (only 1 was listed but I got a bonus)
2 Limes
4 Packham Pears
4 Yellow Nectarines
1 lb Strawberries
4 Bell Peppers (Mini Sweet Peppers were listed but their shipment was bad so they sub'd)
1 lb Asparagus
10 oz White Button Mushrooms
4 Tomatoes (3 were listed so bonus again!)


I still had an onion left from the last order so I decided that dinner had to include it, as well as the asparagus because it doesn't last long. :)


This was really a last minute meal but it turned out so good it will become a "planned meal" in the future.  And it took me exactly 30 minutes!  I started at 5:33 and finished at 6:03.  How cool is that?


So I started by sauteing 1 chopped onion and 2 chopped russet potatoes with a little coconut oil.



Then I took some spears of asparagus, snapped and spritzed them with olive oil, and put them in the toaster oven at 425 to roast.


While the potato/onions cooked on low with the lid on, and the asparagus roasted, I brought a pot of water to boil then turned it down to a simmer so I could poach some eggs.  If you don't know how to poach an egg you can google it for proper instructions.  All I do is get my water to simmer and crack an egg into the water slowly.  Then I just watch it until it looks done.  :)


Once the eggs were done I started piling everything onto our plates.... 




I topped mine with Feta and Kai's with Cheddar... 



Yum!!  Even Kai ate some of her asparagus!

Catching Up

Well it's clearly summer, and clearly blogging has falling to the bottom of my to-do list. :(


I actually THINK about posts all the time but sitting down to write them just hasn't happened.  So I'm going to try and be better (I know, I say that a lot).


In addition to going into the office more while the boss was on vacation, here's what we've been up to for the last week+...


Went to the zoo where the first stop was the playground.  Yep, all the way to the zoo to play in a playground...

 We also checked out the new Flights of Fancy Exhibit.

They're birds.  I've never seen the "ooh-aah" of birds but everyone else seemed to find them fascinating. :)


We also discovered a NEW playground at the zoo!! (BTW, those exclamation marks are sarcastic.  I'd much rather be walking around checking out the animals.  Seriously, we can go to a park for free!)



Before leaving we went to the aquarium to pet sharks and I happened to actually take a photo of a seahorse!
 This one's not so great but he was actually swimming around.  I've never seen them swim before.  Their fins go so fast they're like the hummingbirds of the sea. :)


Of course the new YoguLatte is open so we've been in to visit. :)


Since it was my sister's birthday we honored her by enjoying Cake Batter. :)

 We spent some time at 100 Acres, a park that's part of the Indianapolis Museum of Art.

We went to a Neighborhood Garage sale where we happened on some police horses!!

And then spent some time gathering dino eggs at the Children's Museum...

Then Last night we went to the Celebrity Softball Game for Indiana's Children's Wish Fund at Victory Field.


We saw Rowdie the Indian's Mascot and he even signed the ball for her!

The "celebrities".  The only human one I could pick out from a distance was 55 - Roy Hibbert.  It helps that he's around 100 feet tall. lol!  There were actually a lot of Pacers and Colts on the teams!  And picking out Rowdie, Blue & Boomer was super easy since they're in giant mascot costumes!



At one point Blue, the Colts Mascot came by but we weren't able to draw his attention.  While we LOVE the Colts, Blue has always been a bit of a turd toward our family.  He NAILED the Hubs with a football once and then last night he stopped signing balls just as it was Kai's turn, then turned and did a little butt dance. :(

But ice cream makes EVERYTHING better. :)

This may have been the fastest game ever...with a few exceptions every inning was 3-and-out.

Not really, we were just goofing around!  No matter what the news is like, we're not resorting to cannibalism yet! 


As for eats, well, I haven't taken many pics at all.  So today I'm re-dedicating myself.  Hopefully I'll have a fresh new post for you tomorrow with lots of yummy pics. :D
