Colt's "Game"

 Last night we went to the Colt's "Game".  Yes, I put game in quotes.  It was the final pre-season game of the year so I think we can all agree that the term "Game" can be used loosely.  I'm sure for all those guys on the bubble who have something to prove like it, but really, after the first series, it's kind'a boring.  BUT the Hubs won free tix and I need a chance to learn some player names.  It's a WHOLE new team this year! :)


The Hubs and I got downtown and started walking around looking for a place to eat.  Everywhere close to the stadium was full already so we walked towards the mall.  I voted for California Pizza because I haven't eaten there yet, but was quickly informed that that wasn't "Football Food".  I think Pizza is perfectly good football food but apparently CA Pizza is "snooty" pizza not football pizza.  Boys!

Instead we went to Champs.  They have sports on TVs all over the place so clearly they're much more Footbally.


When we got there we weren't sure if we'd be meeting up with some of his co-workers or not so we got drinks & an Appetizer... Loaded Chips (with bacon & sour cream on the side).  I gotta say they were greasy but very tasty!

When it turned out that it was just going to be us I got a side salad to complete my meal.  We can't take food into the game and there was no way I was going to be able to finish an actual entree.

Once we finally got our check (I think our waitress was new...but she tried really hard) we headed towards the Stadium...  Both the roof & window were open - Score!

Then we walked around looking for our seats & for the Hub's dad who was at the game with his aunts & Granny.  We finally decided to just go to our seats and meet up with his dad at half time.



We stayed through the first half, watched a little football, talked a lot and I got a pretzel (yummy!)

And that ladies and gentlemen was my "super healthy meal" last night... 1/2 an appetizer of loaded chips, a side salad and a pretzel.  Such a role model. lol!

I'm a Grown Up!!

Ok, so here's the deal.  I'm a grown up and if I want popcorn for lunch then I can have popcorn for lunch.  And I don't have to justify it to you!  ...OK, I'll justify it.  Popcorn's a whole grain, and nutritional yeast adds some protein and B12, and the sunflower seeds & Pecans add a little more protein, and raisins just make everything better!  So see, it's a good lunch!  Maybe it could use some veggies but hey, you can't have everything. :P


Now dinner was actually a little lot more "Grown-up".  We had a up-side-down pot pie / veggie casserole dish...I really don't know what to call it. 

Veggie Casserole Dish

First the "sauce"
1 T Butter
1 T Whole Wheat Pastry Flour
1 C Almond Milk

Mix the melted butter and flour until combined.  Add the milk and let simmer, stirring constantly, until it starts to thicken.  (This is where that automatic stirrer would come in handy...I came so close to buying one today but it takes batteries and I would have had to go buy some).


Second the "filling"

1/2 Block Tofu (pressed)
Assorted other frozen veggies - cauliflower, broccoli, carrots & peas - enough to fill your dish

Cube the tofu and mix everything together in a casserole dish.



Top the veggies with the sauce:

Third make the "biscuits"

1/2 C Whole Wheat Pastry Flour
1/4 C Plain Greek Yogurt
1 Shake Baking Soda (1/2 t -ish)
Pinch of salt
Drizzle of Honey (1 1/2 T -ish)
Water as needed (1 T -ish)

Mix everything but the water.  If it's still too thick add a LITTLE water and keep stirring until it's a sticky dough.


Drop the dough onto of the veggies and put in the oven at 350 degrees for about 45-60 minutes.

Until the dough is cooked and the veggies aren't frozen anymore. 

See, now isn't that a grown up dinner?  And not only does it look impressive, it's kid approved.  Kai asked for seconds!!  Now, that may have to do with her not eating much of her lunch BUT I like to think it has more to do with the fact that it was just plain good.  Seriously, she cleaned her plate (well, except for a handful of peas) and asked for more.  This is not like her at all.


In addition to the dinner I made dessert! (Seriously, I'm SUCH a grown-up). Basically I had 1/2 a block of tofu to use and I'm only one person. The whole reason I don't buy tofu very often is because it just doesn't get eaten fast enough. If only they'd sell smaller blocks of it.  But I digress... Dessert

Pumpkin-Tofu Treat
1/2 Block of tofu
1/2 Block of Cream Cheese (4 oz -ish)
Cinnamon, Nutmeg & Ginger Spices
1/2 Can of Pumpkin (8 oz -ish)
Ground Flax Seed (2 T -ish)

Blend everything until smooth.  Taste and decide if you want to add any more spice/sweetener.

Pour into silicone cups.

Bake at 350 degrees until nice and set (about 30 minutes).  Let cool and then put in the fridge.

For dessert I topped them with just a small amount of Ricemallow.

And once again Kai asked for seconds.  Only the first one had ricemallow on it and she didn't even notice so I don't really think they need anything added unless you just like the frosted look. :)

Tuesday's Eats

Yesterday 's breakfast was made because I was running late.  I looked at the clock and all of a sudden it was 7:30!  I take Kai to school at 7:45.  She had eaten (Cereal with milk and a side of apple sauce) and was dressed so all I needed was something quick for myself.

When in doubt nuke an egg! :)

I put 1 egg, a splash of almond milk and some spinach in a small bowl and microwaved it for a minute twenty and then topped it with nutritional yeast, salsa and sunflower seeds.


Salsa makes everything better. :)

Later I had an apple for a snack.  I've been on such an apple kick lately and now we're almost out.  Perhaps I'll make a run to the market today. :)

And then it was time for lunch.  I made myself a salad of spinach, cucumber, carrots, sweet pepper, tomatoes, nutritional yeast, flax seed, sunflower seeds and balsamic vinaigrette.

...and as a side I toasted burnt a slice of Ezekiel Bread with a slice of Gouda cheese.

Gouda cheese is my FAVORITE.  So yummy!!


Once the Hubs was home from work we decided on dinner.  It was finally time to make those quesadillas he's been wanting.  I made up a "fillings" bar and we got to work..

Jalapeno Pepper, Salsa (home made & store bought), Black Beans, Cucumber, Pulled Chicken, Sweet Pepper, Spinach, Corn, Nutritional Yeast and Cheese.

 The Hub's Quesadillas were just chicken, jalapeno & cheese... So boring!

Kai's was cheese, cucumber, sweet pepper, spinach chicken, nutritional yeast and some snuck in beans - then topped with avocado. :)
Plus a side of chips, greek yogurt and cinnamon + raisin unsweetened applesauce.

 I took all the left overs (no chicken or jalapeno) and dumped it into a bowl to make a salad/chip dip.

And I'm fully admitting that I have a tortilla chip addiction.  I cannot stop myself.

Hot Soup & Frozen Yogurt

It was rainy yesterday.  VERY rainy.  It put me in the mood for soup!

MMMMM, Hello old friend. :)

To start I sauteed some onion...

Then added some tomatoes (from my garden!), about 1/3 of a yellow squash, veggie broth, some lentils and some quinoa.

And I let all that simmer until it seemed really good and cooked... about 40 minutes

Then I topped my bowl with some flax seed, nutritional yeast and sunflower seeds.

 It hit the spot! 

Later as an afternoon snack I had an Apple...


When dinner time came around we were supposed to make quesadillas but all I wanted was YoguLatte and the Hubs REALLY wanted Taco Bell (ewww!) so we compromised.  Kai and I got YoguLatte and he got Taco Bell.  Win-Win

I tried their new flavor, Cappuccino.  It was good on its own but I didn't like it mixed with everything else.  I think I'll stick to my favorite...Original Tart. :)

Believe it or not, that massive bowl of yogurt wasn't enough to fill me up.  Once home I polished off some overnight oats (from Kai's lunch) and a bowl of Kale chips with Nutritional Yeast.


I gotta say though, Yogurt does make a fine dinner. :)

And speaking of fine dinners, I just found out yesterday that they're putting a new Yats in downtown...Right next to Moes!  My two favorite "fast foods" right next to each other?  I'm doomed!! :)

Take Me out to the Ball Game...

 Yesterday was my high school alumni baseball outing.  Most of our get-togethers are adult activities so this is an event where we can bring our kids.  It was nice to visit with a few alumni but for the most part I hung out with my friend Christina and her family.  I mean, it had been over 24 hours since I had seen them at their daughter's very first soccer game!!  lol!!

We got to the game and got ready for some fun.  Actually we got to the game and sat in our seats in the Sun.    After about 10 minutes we moved up to the shade.  Yep, we were "those people" who just go and sit where ever we feel like sitting.  It was ok though.  When the guys came that had tickets to our seats they offered to just move down to some other empty seats, rather than us moving.  So nice. :)


On Sundays kids eat free at Indian's Games so the girls got a free hot dog, chips and water. (I ate before the game since I knew there wasn't going to be much that I'd like)

And Kai's favorite treat is Cracker Jack so we went ahead and got some of those as well.

 As the game progressed we watched NONE of it.  The whole time was spent visiting.  At one point I looked up and they weren't even playing any more! (it was a change of innings)

More than anything the girls wanted Cotton Candy so they split a bag and then got silly....



At the same time the Hubs bought a bag of peanuts.   As he was eating them I looked over and freaked out!

The boys were eating them WITH the shell on!!  I've NEVER seen this before.  I've always taken the shell off.  They assured me that it was very normal to eat the peanut shell (because that's where all the salt is - duh!). 

I still think it's weird, and the girls agreed.  We took the shells OFF our peanuts. :)

Finally it was time to leave and as we were exiting one of the concession guys gave Kai a Rowdie toy!  Some girls have all the luck. 
I think she's getting used to nap time at school!

That's what happens when Kai "makes" her own dinner!  It's Fiber One cereal in the middle with tortilla chips, sweet pepper, cucumber and hard boiled egg.  Sounds REALLY yummy doesn't it?  :)

I took a different route...
Black beans, corn, spinach, salsa, sweet pepper, cucumber and nutritional yeast all mixed together and eaten with tortilla chips.
