First Day of School

Yesterday was Kai's first day of school!!  Ok it's pre-school and only 3 hours a day, but still...These are big steps people!  And they require a substantial breakfast.


The night before I made sure we had all our forms filled out (Kai sat next to me filling out her own "forms" - aka coloring).  We packed her backpack.  We picked out her clothes for the first day of school.  We set out her slippers so that she could wear them while she ate breakfast before getting dressed (it's the details that matter).  She even made a breakfast request...Eggs.  Man were we ready!


So in the morning I got up and scrambled 2 eggs with a bit of almond milk.  Then I heated up some frozen California Mix in the microwave and added that to the eggs.  Then I decided a little oatmeal never hurt anyone and she had a big day ahead of her so in addition to the eggs I made up a batch of oatmeal with banana & chia seeds for the two of us.




Kai got up, put on her slippers, sat down, and promply told me she wasn't hungry.

I told her it was her first day of school...she had to eat breakfast.

She still wasn't hungry.

But these are your FAVORITE.

Nope, still not hungry.

BUT You Won't Get ANYTHING To Eat at School.

I'M NOT HUNGRY!

So she went to school happy as a clam... "not hungry".  :(


I picked her up just before lunch and she hadn't starved so I guess it was ok.  Tomorrow we'll try the whole breakfast thing again.   Hopefully she'll be hungry by then.  It was just so surprising - she usually eats so much at breakfast.  It's easily her best meal of the day.  I've seen her pack away oatmeal, Cheerios , eggs, and still want more.  I'm attributing it to the excitement of the day.

After she told me about her new "shy friend, Ella" and sang some new songs for me, we had lunch.

Well we had left over Tofu Stir-fry and I didn't take a new pic.


Now since she didn't eat breakfast I wanted to make a dinner I KNEW she'd eat.

Sweet Potatoes & Chickpeas it was!

SWEET POTATOES & CHICKPEAS

1 can Chickpeas / Garbanzo Beans - Drained & rinsed
1 Sweet Potato - Cubed
Handful of Brussels Sprouts - trimmed & cut in half
Juice from 1/2 Lime
Maple Syrup to equal the amout of Lime Juice
1/2 T Coconut oil

Pre-Heat the oven to 415°
Mix it all together in a bowl & spread on a pan.


Bake for 45-60 minutes stirring once or twice.

I served mine on a bed of spinach & sprouts with some tortilla chips...


Kai still won't eat the Brussels Sprouts but she told me a few times that the sweet potatoes & chickpeas were her favorite.  Being a good mom I already knew that...but it's still nice to hear she liked her dinner.

After all, it was her first day of school. :)

Roasted Pear & Brussels Sprouts

For dinner tonight I modified a recipe from my Power Foods cookbook.  This is one of my go-to cook books since it keeps the ingredients clean and I can usually modify just about every recipe with what I have around.  If you're ever looking for a new book, give this one a browse. :)

I actually had added a pear to the grocery list with this recipe in mind.  Yes, I planned ahead.  I like it that much.

Roasted Pear & Brussels Sprouts
1 Pear
Brussels Sprouts
1/4-ish Onion
EVOO
Thyme
1/2 lemon

Pre-heat oven to 425º.

Cut the end off your Brussels Sprouts then cut in half and toss the leaves that fall.   Do this until you're tired of it or you feel you have enough. :)

Put your cut Brussels Sprouts on a pan.


Cut your Pear into wedges


Add your pear to your Brussels Sprouts.

Cut your onion & add it to the pan.


Spritz your Brussels Sprouts, Pear & Onion with the EVOO
(or drizzle if you don't have a fun little Pampered Chef sprayer)

Sprinkle on some thyme & squeeze some juice from half a lemon then mix it all up.


Put in your pre-heated oven for about 30 minutes.  


Done!


Also on the dinner plate - Sweet Potato Fries.

Just slice & roast at 400º.  That's all I do...


The final plate:

Kale salad with lime juice, mushrooms, tomato, avocado, & black bean & corn salsa.
Roasted Pear & Brussels Sprouts, Sweet Potato fries & left over Kohlrabi & Apple Slaw
