Veggie Shots

It's day two of snack week.  Day one, Apple Pies, was a big hit.  I have a feeling following pie up with veggies may not go over so well, BUT these are fun so we'll see how it goes. :)

To make the Veggie Shots I started with the dip.

In a blender went drained & rinsed Chickpeas, PB2 powder, Better Dark Chocolate Stevia (just bought this today to try) and Almond Milk.

Once the dip was smooth and dippy I piped it into a bunch of little cups.

Then I added dippable veggies... Cucumber, Carrots, Sweet Pepper, Celery, & Broccoli:

Then they went into a portable container along with some extra veggies (a girl can dream).

As for my actual meals yesterday:

Breakfast was left over Apple Crisp with added flax seed, chia seed & coconut whip:

Lunch was left over Spaghetti Squash with Pasta sauce and nutritional yeast.

Dinner was lettuce with salsa, black beans, nutritional yeast, and flax seed...and lots of tortilla chips. :)
