5 AM Wake-up

Ugh, I'm tired....But I've gotten a lot done.  ALL the laundry's put away, the house is cleaned up, the dishes are done, breakfast was made & cleaned up...all before Kai was even dropped off at school!  Yep, getting up at 5 am is very productive.  

And why was I up at 5 AM?  Because the whole world is out to get me! :)

Suddenly Kai is getting up when the Hub's alarm goes off.  I've tried to talk her into going back to sleep.  I've tried laying down with her in her room.  I've tried letting her lay down with me in my room.  I've tried ignoring her.  I've tried bargaining with her.  I've tried putting my foot down.  NOTHING works.  Even if I could get her to go back to sleep, at that point I'm awake.  And then Frodo's awake and wants to go out so he can chase phantom squirrels.  BUT he's still in "recovery" mode so he's not allowed to run around.  Anyway, now the house is clean but I'm tired. 

My breakfast the last couple of days has been a hardy smoothie.

Oats, Chia Seeds, Flax Seed, Almond Milk, Spinach, Frozen Banana, Frozen Peach, and Frozen Apple.

SO GOOD!!!


Since I didn't post yesterday I have 2 (count them 2) lunches to share with you.  


First is Tuesday's lunch:


Tuna Salad (Tuna, Avocado, Greek Yogurt & Spinach) with a side of Sweet Potato and carrots. :)

Yesterday's lunch was a little more involved.

I pan fried some chopped potatoes with onion:

 Then added some spinach:
 In a separate pan I cooked up an egg for each of us:
Into a bowl went the potato mix and that was topped with sundried tomatoes, avocado, nutritional yeast, mini sweet pepper and then the egg:
Was it good?  YES.  Was it as good as the dish I got at La Peeps?  Nope.  Was it all eaten?  Yep!


At the library this week we got a book about the Easter Bunny's Helper...a Skunk, who every time he gets excited makes a stink.  Reading about them making Easter Eggs led to this....


Hard Boiled Eggs
I make them by putting my eggs in cold water and bringing them to a boil.  Then once the water's boiling I add a lid, remove the pot from the heat and let it sit for 18 minutes.  Then I cool the eggs in an ice bath and I'm done.  This method has always worked for me. :)


Afterward Kai colored the eggs with her crayons and we displayed them, using Cuties to fill the empty spots. :) 


Dinner last night was nachos again.  The Hubs never made up his menu for the week so we're seriously slacking when it comes to meal time.  Tuesday night we wound up going out because no decision was made.  Last night we went with nachos because it's nearly instant.  Just pull stuff from the fridge - chop what's needed and pile high.

Our options were:
chips, black beans, corn, greek yogurt, cheddar cheese, salsa, nutritional yeast
avocado, lettuce, spinach, onion and mini sweet peppers


And I used the George Foreman to cook up a piece of chicken for the Hubs.


There it is...Piled High!  I know it is a "last minute" meal but I LOVE nachos!!!
