Green Eggs & 1 Fish, 2 Fish, Red Fish, Blue Fish

Instead of talking about yesterday's eats...which I'll try and do later, I wanted to show you our breakfast for today.

Here's a hint:  Today is Dr. Seuss's birthday.

Ok, if you still don't have it, go get yourself a cup of coffee, come back and try again... it is obviously Green Eggs (no ham) and toast in the shape of 1 Fish, 2 Fish, Red Fish, Blue (ish) Fish.  Hahaha!

I have a feeling there was/is going to be a lot of green eggs consumed today!

To make green eggs you can always use food coloring but do you really need that artificial dye in your life?  Especially when you can turn them green with nutritious spinach!

To start off I put a large handful of spinach and a splash of almond milk into my Ninja.


Then I pulsed it until the spinach was very finely chopped.


I scrambled in 3 eggs.


And set them to cook over med-low.  I used our last non-stick pan because I've found that eggs stick to my stainless/aluminum/whatever pans like nobody's business.  I don't know if there's a trick to cooking eggs or what, but if there is I haven't figured it out yet. :)


Once the eggs were all cooked up I added....


Broccoli!!  We're a broccoli loving crew and the added green didn't hurt.  Plus eggs just seem "empty" without SOMETHING stirred in.  Like eating plain bread when you could add hummus, or jelly, or nutbutter. 


And speaking of bread, the fish are just cut out of a slice of bread.  I used a cookie cutter for the big Angel Fish and then cut the more basic fish out of the scrap.  The "Red Fish" is strawberry jam and the "Blue (ish) Fish" is grape jelly. :)
