One of 'Those' Faces

Yesterday I had 3 people tell me I looked familiar.  Right now I'm hoping that I just have one of those faces and that I don't have a twin somewhere who's making a living in porn, ala Pheobe of Friends. :)

BREAKFAST
For breakfast yesterday we changed things up a bit and had Van's Waffles, toasted and topped with Chocolate Yogurt (Carob Powder mixed with Greek Yogurt), some chopped plum, banana and a few dark chocolate chips.

LUNCH
For lunch I was planning to take Kai to the Indianapolis Children's Museum so I wanted to make up something easily portable and tasty.

I started by cooking up a batch of Quinoa.  When it was almost done I tore up and added some Kale so that it could wilt a bit.

Into a bowl went the Quinoa mix and some chopped Veggies.


A quick and Very Simple Lunch. :D

That got packed up, along with some Green Grapes, a Hard Boiled Egg for Kai (she LOVES eggs) and water to drink.

Once I was all packed up I decided it would be easier to just stop at a park on the way to eat lunch and then head to the museum.  That way I didn't have to deal with toting food around. :)

Maybe we played a bit before digging in. :)

We had a blast at the museum.  First we checked out some Dinos, then it was off to dig for treasure in Egypt, we played in the ice cream shop and climbed a tree house before heading off to Science Works where we basically ran in circles doing EVERY activity several times.  Then we rounded out the trip with a visit to Barbie world.  Do you think the Barbie dolls are the big draw to that exhibit?  Nope!  Kai's only interested in talking on the pink phones.  We're DEFINITELY going to need to keep an eye on her phone usage as a teenager. :)
DINNER
For dinner I wanted Spaghetti.  I have had in in so long and it sounded like just the ticket!

I started by roasting 1/4 Eggplant, 1/4 Onion and 2 Tomatoes at 450 for about 30 minutes.


Just until they were nice and browned...


Then I threw them into a pot with a few more tomatoes, some minced garlic and a handful of chopped basil.

To go with the spaghetti we needed garlic bread but I didn't have any and it was WAY to late to make some from scratch so I grabbed a tube of Crescent Rolls, the spray butter and the jar of minced garlic.

They were good but not very garlicy.  They probably needed MORE garlic but to be honest I'm not a big fan and so I tend to err on the side of caution when using it.

Once we had the rolls and sauce going it was just a matter of cooking up some spaghetti.

And since I was the one doing it, I tossed some chopped spinach in.  :D


So Good.  So Tasty.  So Right.
