Fried Rice

Fried rice is one of my favorite meals to make.  Everything's cooked in one pan and eaten out of one bowl.  There's practically no clean up! :D

If you don't have left over rice then it's easy enough to cook some up.  I've always heard it should sit in the fridge for a day, or at least a minimum of a few hours, but I've never had a problem with "fresh" rice.  In this case I made some in the morning and then put it in the fridge until lunch time.

FRIED RICE
(adjust ingredients to your taste - you really can't mess this up)

1 Onion - Chopped
2 Green Onions - Chopped
12 Baby Carrots - Chopped
1/4 Head of Broccoli - Chopped
1 C Mushrooms - Chopped
2 Kale Leaves - De-Stemmed & Chopped
1/4 Bell Pepper
1/2 C Rice
2 Eggs
Splash of Tamari Sauce (Soy Sauce)

Stir Fry your veggies.
Add your rice and let it stir fry a little longer.
Push everything to the edges of the pan so there's a hole in the middle.  Add your eggs and scramble.
Stir everything together & add your Tamari/Soy Sauce.
Serve with chop-sticks. :)

Veggies are Stir-Fried & pushed to outer ring.

Stirred together with a little Tamari & Served with Chop-sticks.
