Cous-Cous and Pumpkin "Ice Cream"

You know what makes me happy?

Really happy?

When Kai eats ALL of her meal.

See, it doesn't take much to make me happy.  Not really.  A little Almond Butter here (a new jar is happily sitting in my fridge now) and an eaten meal there... but sadly Kai's not very good at sitting down to eat a meal.  She'll tell me she's hungry all day long, but the minute it's meal time she's suddenly "not hungry".

That's why lunch today was such an enjoyable experience.

She ate Every. Last. Drop.

No begging, bribing, or negotiating necessary. :)

This girl LOVES her Cous-Cous.

GREENS & COUS-COUS
1 cup water
Frozen Okra
Frozen Green Beans
Frozen Broccoli
Kale - de-stemmed and torn into bite size pieces
1/2 cup Cous-cous
Nutritional Yeast to taste

In a saucepan add your Water, Frozen Vegetables and Kale.  (I added so many veggies that you couldn't even see the water...probably 1/2-1 cup of each)
Once the water is boiling add the cous-cous, reduce the heat, cover and let simmer for about 8 minutes - so that all the water is absorbed.
Plate & top with your nutritional yeast.

After lunch I asked Kai if she wanted some Pumpkin Ice Cream.

Who would could ever say no to that?

PUMPKIN "ICE CREAM"
1 frozen banana
1 to 1.5 Cups Pumpkin
Pumpkin Pie spice - to taste
4 Ice Cubes
1/2 a Gram Cracker Square
Drizzle of Agave Nectar

Blend the banana, pumpkin, spice & ice cubes until smooth.  If you need to thin it out add some Almond Milk (I didn't need to but the Ninja Blender's pretty strong)
Plate & Top with Gram Cracker Crumbs & a drizzle of Agave Nectar.

If you want to REALLY impress your little lady, serve it in a tea cup.  This was a last minute idea because all our bowls are so big.  I never imagined she'd get such a kick out of it!  I think she liked the tea cup even more than the "ice cream"...which she totally enjoyed. :)
