Quinoa Stuffed Tomatoes

Ever had a tomato you weren't sure what to do with?  Yeah, me either.


But sometimes you just want to change things up.  Try something new.  Use up some of that quinoa you have made up in your fridge.


That's where I was Saturday night.


I had tomatoes & quinoa and a need to eat...


Stuffed Tomatoes it was...


Pre-heat oven to 375°.


Hallow out 2 tomatoes & keeps some of the pulp.
Set the the tomatoes upside down on a paper towel to dry a bit.


Chop up about 
1" of a zuchinni
1/2" onion
1/4 Mushrooms
2 leaves of Kale (stem removed)

Then sautee in some EVOO on Med heat until the kale is wilted and the onion is clear.

Stir in about 1/3C cooked Quinoa.


Stuff as much as you can into your tomato shells.
(Go ahead and eat any stuffing that's left over - I did!)



Top with some Mozzarella & Parmesan Cheese & put in an oven safe dish with 1/2" of water.
Put in to your oven (pre-heated to 375°) for 30 minutes.



Eat with assorted leftovers. :)

I was actually surprised that Kai like it so much.  She likes her veggies but tends to shy away from things that are all mixed together.  This however she liked!  I think the toasted cheese topping helped. :)
