No oatmeal...Seriously

Ok, So I don't tell you about my breakfast all the time.  Mostly because I don't want to bore you.  It's always oatmeal.  I know exactly how much I like (1/4C oats, 1/4C water, 1/4C Almond Milk + Topping).  And while I find the topping variances completely delicious and unboring I worry that a photo, everyday, of oatmeal, may not be as inspiring as one might hope.  :)


So today (seeing as how it's exactly 4 months until Christmas!) I'm giving you a gift!  Something new!  Something exciting!  Something Inspired...

Into a Musical Toaster...

The novelty of hearing Mickey Mouse Club every time it pops wears off VERY quickly. :)
The lack of toast in our lives is very likely due to this toaster... Cute as it is.
And on to our plates...

Topped with Yogurt, Banana, Blueberries & Kiwi


This breakfast can DEFINITELY give oatmeal a run for its money.  I was as full after eating it as I am after a delicious, well topped, bowl of oats!  I'm thinking that a chocolate-nutbutter topping will be in order very, very soon. :)

Now, while lunch and dinner were delicious they really can't compete with the hype of the waffles.  But that's no reason to stop reading now.  I mean, you wouldn't want to hurt Lunch & Dinner's feeling would you?  After all, it's only 4 months until Christmas - Show 'em that seasonal love...


Lunch for me was left over lasagna (OMG, it was even better cold!!), green bean fries, and Yellow Bells with Humus...and 1/2 a banana & orange which where eaten while I was plating so they didn't make the photo. :)

Lunch for Kai was left over lasagna (Kai ate all but the eggplant, humf!), banana & orange, green bean fries, hummus and a "Jelly Sandwich"... 1 slice of bread with ground flax & nutrition yeast under a spread of fruit only jelly.


GREEN BEAN FRIES
This is as basic as you can get without eating them raw.

Handful+ of Yellow Green Beans
Coconut Oil
Salt

Pre-heat oven to 415°
Rinse your beans & Snap the ends off. 
Put in a bowl and coat with a little bit of coconut oil & salt.
Spread on a cooking sheet and roast for about 30 minutes, stirring once.

From the garden, to the oven, to my belly!  YUM!!


Then the Hubs made dinner!  


What did he make?  Grilled Hamburgers & Potatoes.  Such a "guy meal". lol!

Hub's Plate - 2 Sweet Onion Bubba Burgers + potatoes + raw veggies (most were pre-photo eaten)


Kai's Plate:  Turkey Burger (she ate maybe half of it) + raw Veggies + Potatoes


My Plate:  The last of the Lasagna (sad face) + Potatoes
AND
Mega Salad:  Massaged Kale (Kale, EVOO, Lime Juice, Salt) + Spinach
+ carrots + chopped Bells + Sprouts + cuke + humus


The grilled potatoes were almost as simple as the green beans...

GRILLED POTATOES
4 potatoes (yes the 3 of us ate 4 potatoes!!)
EVOO
Rosemary, Thyme & Salt

Chop your potatoes into large pieces.
Coat with some EVOO & Spices.
Put in a grill basket & Grill on low flames until you feel they're done. (about 20 minutes)

So that was our day.  A brand new breakfast, left over lunch, and a Hubs made Dinner.

  1. I absolutely LOVE oatmeal and eat it almost everyday for lunch during the cold months. Why for lunch and not breakfast? Well, I have no idea actually. But I love it for lunch!

  2. They're actually yellow - it just happens to be what I planted this year: Yellow Rounded Podded Kinghorn Wax (Phaseolus vulgarus (Botanic)) - yeah, I still have the seed pack to reference. :) But you can use what ever green bean you happen to find.
